Pumpkin pecan energy balls

It’s October which can only mean one thing, time to cook with an ingredient you only ever use once a year.. pumpkin!

To do something a little different from the traditional pie or a cake I decided to make something seasonal but also a bit sensible; pumpkin pecan energy balls. 

If pumpkin spices isn't your thing you can always make them without and substitute the pumpkin for 1/4 cup of mashed banana and a few less spices!
These bites kept for just over a week in our fridge, but could have lasted longer if we weren't taking two to work every day.
