My Red Thai curry

In this dark and freezing weather there is nothing better than a homemade curry. Since my month in Thailand I have been an absolute lover of Thai curries and I make a mean green chicken curry. But for months that need comfort food and soothing smells nothing beats a red/satay Thai curry.

As with all of my recipes there is always enough for two, with a lunch portion for the next day!


This recipe makes two generous portions, or three regular sized portions.
